Orange Rice
- 2 cups diced celery with leaves
- 1 tsp. salt
- 1/2 cup chopped onion
- 1 Tbsp. Grated orange rind
- 1/2 cup butter, melted
- 1 cup fresh orange juice
- 1 cup water
- 1 1/2 cups uncooked long-grain rice
Sauté celery and onion in butter in a large saucepan over medium heat 5 minutes or until tender. Add water, salt, orange rind and orange juice. Bring to a boil. Add rice; cover, reduce heat and simmer 20 minutes or until liquid is absorbed and rice is tender.
This simple sweet looks smashing, in part because it is shaped in a springform pan. We like it frozen and chilled. A great make-ahead dish.
